We love soup – it’s just one of those things that you can cook all year round whatever the weather. Writing this over the Easter weekend (sorry Mark – late copy as ever….) brought this to mind as on the Saturday we were sitting out in the sun, looking for shade and sunscreen and slurping on a chilled gazpacho. Easter Sunday saw the heating back on, with a bowl of thick warming ribollita in front of a film on the telly. We included our recipe for ribollita in the March 2014 issue of By The Dart but when the weather warms up again, nothing quenches the thirst better than a punchy, chilled soup like a Spanish gazpacho. Us Brits have never really got to grips with the idea of cold soup (Hungarian cherry soup anyone?) but when the weather’s scorchio, give it a go. No cooking and serve it straight from the fridge – what’s not to like?


GAZPACHO When the weather warms up again, nothing quenches


the thirst better than a punchy, chilled soup like a Span- ish gazpacho. Us Brits have never really got to grips with the idea of cold soup (Hungarian cherry soup anyone?) but when the weather’s scorchio, give it a go. No cooking and serve it straight from the fridge – what’s not to like?


• 2tbsp olive oil • 1 red onion, peeled and chopped • 1 red pepper, deseeded, and chopped


• ½ cucumber, peeled, deseeded and chopped


• 3 cloves garlic, peeled and crushed • 600g very ripe tomatoes, chopped • 1 litre water • ½ tsp ground cumin • 1tbsp sherry vinegar • Salt and pepper


1. Put everything into a large jug and whizz until smooth with a stick blender. Alternatively do it in batches in a food processor or liquidizer.


2. Make sure you season the soup well as serving the soup cold dulls the flavours.


3. Bring to the boil and simmer for 10 minutes. 4. Chill until very cold.


5.. Serve in glasses with a little extra olive oil drizzled over the top.


Try alternatives to the basic recipe with overripe melon or strawberries added to the mix – delicious!•
