Healthy and Delicious Meals Are in the Bag by Lisa Marlene

omenico Bosco and his wife,


Barbara Gallone, are passionately in love with every- thing about healthy food. Their love is made visible at Kitchen 41, the first restaurant the couple has owned and operated. Bosco uses the French technique,


sous vide, to cook his healthy Italian fare. The words mean “under vacu- um” and entail sealing the food in a BPA-free, heat-safe, plastic bag, sub- merging it in a water bath and slowly cooking it at a low temperature. The process seals in the natural juices and aroma so the food retains all of its nu- trients, making it more flavorful. “The method also allows food to be cooked with little to no fat, which is an- other reason I prefer it,” says Bosco, a graduate of Villa Santa Maria Abruzzi, a cooking school in Italy. All meats, fish and vegetables are prepared in this manner, as well as vegetables and the chef’s marinara sauce. While the menu is changed often, the quality remains consistently high because Bosco uses only the freshest ingredients and all dishes are rigorously


prepared from scratch. “They are gluten-free and without any artificial flavors or preservatives such as MSG,” he states. “Our menu is also GMO-free and low in sodium. Additionally, I use


only extra virgin olive oil and clarified butter, which we make.” Among Kitchen 41’s standard menu items are smoothies, soups, salads, ap- petizers, pasta courses, main courses and side dishes. Three- to seven-day weekly meal plans are available with a wide array of choices such as veal, chicken, pork, turkey, salmon, cod, grouper, Mahi Mahi and shrimp. Pre- pared dishes are delivered to the home or workplace, free of charge, up to three miles from the restaurant’s location. “We can customize any meal plan to meet an individual’s health or dietary needs. We will even consult with your trainer or nutritionist to ensure every meal plan is exactly what you need,” advises Bosco.
