SCRUMPTIOUS, SIMPLE, SEASONAL – NO FUSS!
Even the most patient of us can find our good humour wearing thin when confronted night after night with the dreaded phrase ‘don’t like it’. Throw in the added strain of finding fresh twists on Christmas recipes and this already hectic period can become fraught at mealtimes. Well, worry not! MUMMY’S POT NOODLES
Ready-made noodles are always popular with kids, but you can easily make your own healthier version, and put in whatever vegetables you have to hand. This dish looks great in a glass or pot like the ones you can buy, but far tastier and very quick to prepare!
You will need...
• 75g fine Chinese style dried egg noodles • 50g frozen peas • 1 tbsp sunflower oil • Half an onion, thinly sliced • Small clove garlic, crushed • One and a half tsp soy sauce • 75g cooked chicken, shredded • 40g canned sweetcorn • 125 ml chicken stock • Half tsp cornflour
Method...
Cook the noodles according to the packet instructions and add the peas two minutes before the end of the cooking time. Meanwhile, heat the oil in a pan and sauté the onion and garlic for 3 minutes.
Stir in the soy sauce, chicken and sweetcorn. Strain the noodles and peas and add to the pan. Add the chicken stock. In a small cup mix the cornflour with 1 teaspoon of cold water and add this to the pan.
Bring to the boil and cook for one minute, stirring.

ANNABEL’S TASTY BEEFURGERS
The grated apple makes these beef burgers really moist and tasty. If you want to freeze burgers, its best to freeze them uncovered on a tray lined with cling film. Then, when frozen, wrap each one individually in clingfilm so that you can remove and defrost as and when you need them. These are fun decorated with spaghetti hair and face or serve in a bun with salad and ketchup.

MAKES 8 BURGERS Suitable for Freezing
• 1 onion, peeled and finely chopped • 1 tbsp vegetable oil • 400g lean minced beef • 1 tablespoon fresh parsley, chopped • 1 chicken stock cube finely crumbled • 1 apple, peeled and grated • 1 egg, lightly beaten • 50g fresh breadcrumbs • 1 tsp Worcestershire sauce • Salt and freshly ground black pepper • A little plain flour • A little margarine and Marmite for grilling

Heat the oil and sauté the onion for about 5 minutes or until softened. In a mixing bowl, combine the cooked sautéed onion with all the ingredients except the flour. With floured hands form the mixture into 8 burgers. To grill, place the burgers on a grill pan or foil lined baking tray. Dot with a little margarine and Marmite and grill for about 4 minutes on each side or until cooked through. Alternatively fry in a little hot oil in a shallow frying pan for about 3 minutes each side until cooked through.
Arrange the burgers on a plate. Decorate with peas for eyes and a cherry tomato for the nose. Arrange the spaghetti around the burger for the hair.
