With the Christmas holidays just around the corner, what better way to keep the kids occupied than showing them how to make healthier alternatives to their favourite sweet treats. These delicious blueberry muffins are made with less fat and are perfect after school treats and breakfasts on the go!
Instructions
Makes 12 muffins Ingredients • 280g white self-raising flour • 90g wholemeal flour • 30g golden caster sugar • 350ml skimmed milk • 50ml baking liquid • 2 eggs, large • 150g blueberries • ½ tsp baking powder

• Pre-heat oven to 160°c (fan)/180°c/ Gas Mark 4.
• Lightly grease a Pyrex 12 hole muffin tray.
• Place the flours, caster sugar and baking powder in a large bowl and combine.
• Whisk together the milk, baking liquid and eggs and add to the flour and sugar mixture.
• Stir to a smooth batter using a wooden spoon.

• Stir through the fresh blueberries.
• Divide the mixture between the recesses of the muffin pan.
• Bake in the oven for 25 minutes.
• Once baked transfer to a wire rack to cool completely.
