Meridian meets up with Philip Urasala, the new General Manager of Chapter One, established as one of the country’s top restaurants and is the proud holder of one Michelin star and four AA rosettes. Before joining the team at Chapter One Philip Urasala was the restaurant manager of Chapters All Day Dining in Blackheath Village, the position now fi lled by Jo Shaw and Philip still oversees Chapters as General Manager for both restaurants.

Before working at Chapters All Day Dining, where had you worked? Prior to Chapters All Day Dining, I was working as Restaurant & Bar Manager in Harvey Nichols, Knightsbridge for a Year. Prior to that I was the Food &Beverage Manager at The Vineyard at Stockcross with Chef John Campbell and was part of the team that got the second Michelin Star in 2006-07. Before that, I was Assistant Manager in the Food & Beverage Department at Chewton Glen Hotel in Hampshire. I worked in the United States for 3 three years, before that I was a Teacher at a Swiss Hotel School.
How long were you at Chapter All Day Dining? I joined a month after opening and helped through the transition time when the team was still settling in. In my new role as General Manager I still pop into Chapters at least twice a week and it’s great to still see so many regular faces and of course I’m helping Jo settle into her new role.
How do you fi nd it working at the restaurant Chapter One? Working at Chapter One, the fl agship of the company, I am thoroughly enjoying it. It is different to Chapters in many aspects, the obvious one being a Michelin Star restaurant. I love being back in the Michelin environment. The challenges are different, the customers, the food, general operations are all different from Chapters. Being the fl agship, you have to be the best in everything that you do and I’m enjoying that aspect. Being at Chapter One also gives me the opportunity to work closely with the Executive Head Chef Andrew Mcleish.
