Sales opportunities are limited if you cannot guarantee a con- stant and consistent supply. The logistical nightmare of overcoming these hurdles, plus the ever escalating costs incurred, mean that small- scale local meat production is at best limited and at worst, economically unviable. Local Origins Rural Network (LORN) is working on a project
to get more locally produced meat from ‘pasture to plate’. The group hopes that by co-ordinating shared trans- port, it can reduce costs and by working closely with Mull Slaughterhouse, once it has been refurbished, it can deliver
a well-butchered, attractively packaged and labelled prod- uct to existing customers. The aim is to develop a regular supply of livestock from differ- ent farms and crofts through the abattoir, leading to a regu- lar supply of locally reared meat for both retail and wholesale. This could also lead to oppor- tunities for new value-added businesses, such as charcu- terie, pies and ready meals.
