Some Mushroom


species: − Morels: These mushrooms tend to grow in old growth orchards and in places where forests fires have ravaged the landscape in the past. Suggested recipe: Morel mushroom sauce over Pheasant. − Shaggy Mane mushrooms are usually found in ground that has recently been disturbed. They also grow abundantly in grassy meadows, at roadsides and on lawns. Add these to your Chicken Tetrazzini or whip up a Shaggy Mane Casserole (good for road cuisine). − Boletus: A little over a week after the first heavy rains of the wet season (September thru November) young Boletes begin mounding up beneath the pine needles under the trees. Try stuffed Boletus caps or Bavarian mushroom soup with dumplings. − Lobster Mushrooms: Lobster mushrooms are widely eaten. They have a firm texture and, some say, a rich sea-food like taste. These mushrooms can be found pushing their way up from under the humus and duff in forests after a good rain when humidity is high. Try braised Lobster mushrooms over biscuits.

Check Forestry maps or the Web for forest fire areas 1yr or older. − Regulations and some suggestions as to where to find good picking areas can be found on the Ministry of Forestry and Range website at www.for.gov. bc.ca/dos/dist_docs/mushroom.htm Safety: Please note that some mushroom species are deadly or


dangerous to your health if consumed. If you're a beginner, take an experienced local or guide along on your picking trip. Study the guide books and above all else, be absolutely certain you know what species of mushroom you're picking before you eat it. Also please use a compass or, again, have a knowledgeable guide with you.
