Quinoa and Black Bean Salad 2 tsp
Lime zest, grated
2 Tbsp Lime juice 2 Tbsp Olive oil 1 tsp Sugar 1/2 cup Quinoa, uncooked
Procedure
1 In a large bowl, whisk together lime zest and lime juice, olive oil, sugar, salt and pepper. 2 Rinse the quinoa with cold water and drain. Cook according to package directions. 3 Add the cooked quinoa to the dressing. Mix in the beans, tomatoes, green onions and cilantro.
