Sweet Potato Quesadillas 2
1/2 Onion finely chopped
1 clove Garlic minced 1 Tbsp Oregano, dried 1 Tbsp Basil, dried
Procedure
1 Preheat oven to 400 degrees. 2 Add spices and sweet potatoes to skillet and mix well, adding a little water if it's too sticky.
3 Cut sweet potatoes into chunks and cook (either place in steamer basket and steam on stove top, bake, or microwave) until soft.
4 Mash potatoes with fork or potatoes masher. 5 Sauté onions in a large skillet until soft. Add garlic. 6 Set burn to very low heat to keep warm without burning. 7 Lightly spray a large baking sheet with cooking spray.
8 Spread sweet potato filling on half of each tortilla. Place spinach leaves on top of filling and fold tortilla to close. Repeat with all tortillas.
9 Bake until browned and crisp, approx.15 minutes. Cut into wedges for serving. Servings: 4 Degree of Difficulty: Easy
