Roasted Vegetable Pizza 1

Eggplant, cut in 1/4" slices Zucchini, cut in 1/4" slices


Red or purple onion, cut in 1/4" slices


1 cup Pizza Sauce (any prepared pizza or pasta sauce will do)


Procedure


1 Preheat oven to 400 degrees. 2 Slice vegetables to 1/4" thickness.


3 Line 2 baking sheets with aluminum foil for easy clean-up (you can skip this step if you prefer and use cooking spray instead).


4 Place a single layer of vegetables on each baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.


5 Roast vegetables for 20 minutes or until slightly browned. 6 Spread 1/4 cup pizza sauce on each pita bread then sprinkle with 1/4 cup (2 ounces) shredded cheese. 7 Evenly divide roasted vegetables and place a portion on each pita.


8 Place the pizzas onto the same baking sheets and return to over. Cook for 7-10 minutes, or until cheese is melted and lightly browned.

Pita breads, whole wheat


8 ounces Mozzarella cheese shredded 1 Tbsp Olive oil


Salt and freshly ground black pepper, to taste


Tips


Use fewer veggies on each pizza and save some for a tasty sandwich the next day! If you are cooking for one person, have a pizza for dinner, then wrap another for lunch the next day. The remaining pizzas can be frozen and eaten later.
