I would like to credit its originator, this recipe has become a "meme," which means it has been posted and re-posted or shared on the Internet so many times that no one can be sure where it originated–not unlike recipe sharing throughout the ages.






This time I salted the avocado before cracking the eggs into it, then seasoned with red pepper, black pepper, paprika, a slice of fresh jalapeño and fresh minced garlic. I have a jar of minced garlic I keep in my refrigerator that is just as good as mincing it yourself without the resulting  the grocery store. I put it in the oven for 15 minutes and served it with fresh cilantro. It was perfect just like a pot o' gold.

Avocado Egg Bake


1 Avocado* 2 Eggs, medium


Salt & pepper *One avocado makes two servings.


[Suggested seasonings and/or toppings: seasoned salt, paprika, garlic, red pepper, cilantro, tomatoes, hot sauce, salsa, jalapeño.]


Preheat oven to 375 degrees.


Slice avocado in half and remove pit. You will situate the avocado halves in a pan with the insides facing up. To help them stay upright  bottom. Place in an oven-safe pan with about a 1/2 inch of water.


Salt the avocado and crack an egg into each half. I used large eggs–because that is what I had on-hand–and let some of the white run off. Season and bake. Fifteen minutes will result in a medium soft egg yolk.
