Chocolate Chip Cheesecake Cookies


1 1/3 cups graham cracker crumbs 1/3 cup granulated sugar

4 cups nonfat dry milk powder 1 1/2 cups sugar


1 cup non-dairy coffee creamer 2/3 cup unsweetened cocoa powder 1 (4-oz.) pkg. instant chocolate fudge pudding


Mix all the ingredients together in a large bowl. If a finer consistency is desired, pour the mix into a blender or food processor and run it through that. Store in an airtight container. Add 1/4 to 1/2 cup (depending on cocoa preference) of the mix to an 8-oz. mug of boiling water.

Layer the above ingredients in a 1-quart jar.

Remove chocolate chips from jar and set aside.


Combine remaining contents of jar with 1/3 cup butter until well blended. Press even amounts of the mixture onto the bottoms of lightly buttered mini muffin tins.


Melt one cup of the chocolate chips and set aside to cool. In a mixer, beat 3 (8-oz.) pack- ages softened cream cheese until fluffy. Gradually beat in 1 (14-oz.) can sweetened condensed milk and the melted chocolate and stir until smooth. Add 3 eggs and 2 teaspoons vanilla extract and mix in thoroughly. Spoon the batter into the prepared cups. Top with the remaining chips. Bake in a preheated 300 degree oven for about 15 to 20 minutes or until set. Let cool and refrigerate.


Blizzard Bites


1 cup Rice Chex-brand cereal 1 cup pretzel twists, small 1/2 cup dry-roasted peanuts 1/3 cup sweetened dried cranber- ries (craisins)


1/3 cup dried pineapple, coarsely chopped


1 cup white chocolate chips 1 canning jar, quart-size with lid and ring


1 food storage bag, small


Layer cereal, pretzel twists, pea- nuts, cranberries and dried pineapple in a quart-sized canning jar.


Place white chocolate chips inside food storage bag, and place on top of layered ingredients.


Seal jar, and attach a printable gift tag with recipe instructions. Makes 3 1/2 cups snack mix.


Remove white chocolate chips from


jar. Empty remaining jar contents into a large mixing bowl, and mix thor- oughly.


Place white chocolate chips into a microwave-safe bowl. Melt chocolate chips in the microwave for 30 sec- onds. Remove and stir until melted. If additional time is needed, check at 15 second intervals. (You may add 1 teaspoon solid shortening to thin chocolate mixture, if necessary.) Pour melted white chocolate chips over snack mixture. Stir until snack mixture is evenly coated. Spread mixture in a single layer over waxed paper, and allow to cool completely. Break mix into smaller pieces, and store in zipper food storage bags or an air-tight storage container.
