One seminal study, published in the Journal of the National Cancer Insti- tute in 2002, established the link be- tween eating cooked tomato products and a lowered risk of prostate cancer. “Cooked tomatoes… have more cancer-fighting properties than raw to- matoes,” advises Li. “Both contain the molecule lycopene, but heating the tomato changes its chemical structure and makes the benefits more read- ily available to the body. You should eat two to three [½ cup] servings of cooked tomatoes a week.” The Angiogenesis Foundation
