Grilled Trout Salmon, with Spinach, Butternut Squash and Mango Salsa Main Course (lunch or dinner)


TROUT SALMON (PREPPED) Ingredients Salt Black pepper Italian seasoning


Method Season trout salmon with salt, black pepper and Italian seasoning Place seasoned trout salmon on a heated grill and grill for 2-3 minutes on each side.

BUTTERNUT SQUASH Ingredients 1lb butternut squash (pealed & diced) Salt to taste 2 cups of water or chicken stock


Method Boil or steam butternut squash for 5 minutes or till tender Mash butternut squash in a bow with potato masher Season with salt before serving


STEAMED AND TOSSED SPINACH Method Steam and toss spinach in 1


tablespoon of olive oil for 1-2 minutes. Serve warm.


SALSA Ingredients Mango (pealed and diced) Red bell (pepper thinly diced) Green (pepper thinly diced) Tomato (pepper thinly diced) Chopped cilantro 1 teaspoon lime Salt to taste


Method Mix ingredients in a bowl. Serve cold.
