Harvest Lentil Salad This flavor-packed salad makes the most of fall’s final bounty.

INGREDIENTS 1 cup dried lentils, picked over
1 clove garlic, chopped 1 teaspoon salt 1 cup tomatoes, seeded and diced
¼ cup red onion, diced
¼ cup flat-leaf parsley, chopped
¼ cup fresh basil, thinly sliced
¼ cup extra virgin olive oil 3 tablespoons red wine vinegar
½ teaspoon black pepper
INSTRUCTIONS 1 Bring 4 cups of water to boil in a 2-quart, heavy saucepan with lentils, garlic and salt.
2 Reduce heat and simmer, uncovered, until lentils are just tender, 15 to 25 minutes.
3Drain well and transfer to large bowl.
4Toss hot lentils with remaining ingredients, and salt to taste.
This dish can be served room temperature or chilled.
