M Kitchen Hygiene Getting the kitchen habit

Jonathan Hooper, marketing manager at Connect Kitchen Hygiene Products Ltd, reports.

Connect Hygiene Products has realised that although everyone is aware of the value of hand washing in the control of bacteriological spread, half the battle is get- ting kitchen staff into the habit so that it becomes sec- ond nature to wash and wipe hands and surfaces as the working day progresses. To do that, a bit of thought is required beyond staff training and workplace posters. It needs a bit of insight!

Washing hands regularly is an essential part of life for anyone preparing food in a busy kitchen.

Government guidelines suggest that hands should be washed before and after touching food, using kitchen utensils and after sneezing, nose blowing, touching hair and face, smoking and, of course, after going to the toilet. With hand towels being the most hygienic way to dry hands after all that washing,

it is important that the way they are actually dispensed is both hygienic and cost efficient in use.

Connect Hygiene has looked closely at this, recognising that the

dispensers themselves can be a source of contamination if they are not well maintained. The ultimate must be to have an easily cleaned dispenser which does not require the user to actually touch it all, thus reducing cross contamination risks to an

Coffee Clean for content customers

The incredible growth in the popularity of coffee in recent years had led to huge numbers of machines in bars, pubs and restaurants, let alone the specialist high street shops. There are esti- mated to be around half a million coffee and vending machines in use at commercial premises in the UK and well over 2000 specialist outlets. Consumers expect and demand better quality - good quality ingredients are essential to making the best possible cup of coffee, of course, but so is having a clean and hygienic machine.

Hygiene is always essential for reasons of food safety but a poorly maintained and unclean machine can also affect the quality of the coffee and cost more to run. Coffee machines are used throughout the day and the hot and humid working environment can quickly lead to the build of residues and bacteria that can block tubes and filters to decrease performance and efficiency. Many machines use high pressure, to produce espresso, for example, and when this is reduced by dirty of blocked components it can affect the quality of the coffee. This is because brews take longer which allows more of the bitter tasting ingredients in the beans to be released. Although the machines are generally very reliable, a little regular and routine cleaning and maintenance can help reduce overall operating costs. One well-known retailer reported that around 60% of its coffee machine repairs were required because of poor cleaning. Across an installed base of 150 machines this resulted in a repair bill of over £80,000.

Diversey offers a complete range of products, including the versatile Suma Coffee Clean, for all types of coffee machine. Each product has been developed to be compatible with the materials commonly found in coffee machines to ensure gentle but powerful cleaning performance without affecting the taste or quality of the coffee. These products provide a simple and effective

operation, so Connect Hygiene Products Ltd had time to consider alternatives. It was agreed that “Leonardo” would represent a particularly neat solution and that name has succeeded Da Vinci.

I Leonardo is at the movies!

Additions to the range will continue to uphold the “Da Vinci” brand values of robust, well designed products that are cost effective in use, good looking and easily maintained. Which is why CineWorld decided to install their current complement of dispensers in both their catering areas and their washrooms. Using tissue that is as effective at drying as well as wiping has meant that the number of dispensers in the catering area has been kept to a minimum, a useful attribute when space is at a premium. As one of the few towel and tissue manufacturers with mill facilities, it made sense to integrate the management team at the Disley site, ensuring synergy between the businesses. This is proving advantageous in a market where supply chain uncertainty is

causing industry wide headaches. The price spikes are taxing the ingenuity of even integrated suppliers, with no definitive picture yet in sight.

In these tricky times, Connect has been looking at how best it can offer even more support to the sales training for its partner distributors. Bringing sales teams together, though essential on occasion, can be a time consuming and costly operation. Aware of this, Connect has produced a DVD that can be sent to all who are interested. The film majors on the best response to familiar questions asked by end users about cost and performance. It details the case for thorough and professional cost in use analysis, the features and benefits of the Leonardo range and highlights waste and environmental issues. It is intended to replicate the traditional sales presentation but

absolute minimum. The Leonardo range of systems dispensers, available exclusively through Connect Hygiene, offers both a mechanical and an electronic hands free solution. The mechanical or mechanically operated version controls consumption and presents the towel in a flat, ready-to- use format, whilst the electronic Smart dispenser additionally allows control over sheet length and the speed of dispensing as well as being battery operated, so no need for wiring. However, if a more

traditional dispenser is required, then one that has had the user-operated dispensing lever treated with Bio-pruf to inhibit microbe growth to provide even more hygiene protection is the sensible choice. Of course, all dispensers in the Leonardo range have been designed to trap as little dirt as possible. They are sealed units, with a smooth, easy- wipe cover, which is seen as an essential feature and a simple way of preventing cross contamination. Space can be an issue in kitchens - not all are generously proportioned, so choosing a single dispenser that meets the usage needs can be allied to choosing a tissue that has the high

absorbency and wet strength to be able to be used for both hand drying and surface wiping. Surfaces that are used in food preparation are expected to be wiped down before and after every food prep task. To have one dual purpose dispenser thoughtfully placed for maximum convenience encourages usage, helps build the cleaning habit and so makes the risk of contamination much less of a hazard. They may seem little things, but with hygiene such a vitally important issue, making it easier for kitchen staff to comply with regulations is an insight worth taking on board. www.connecthygiene.co.uk

way to keep equipment hygienically clean and in perfect working condition to produce consistently fresh-smelling and tasting drinks. They also prevent the blockage of coffee filters and other components that helps to reduce machine breakdowns and resulting lost revenues and maintenance costs.

Liquid products in the range are supplied in bottles with a special dosing cap that ensures accuracy for consistent high performance and safety without the risk of spillage or skin contact. The range also includes convenient tablets and capsules that make it easy to carry out routine cleaning and maintenance tasks. The entire range is colour coded for simple product identification. Diversey produces illustrated mini-guides for each product and machine type. These offer step-by-step guidance to show users how to achieve optimum results. Products are also available for the highly effective removal of coffee stains and general coffee soiling from cups, laundry, chairs and upholstery. www.diversey.com
