Serves 1 Where did you train to become a chef?
I trained at the South African Chef’s Academy in Cape Town, South Africa, where I was mentored by Garth
Strouble, an acclaimed chef and graduated with the chef of the year award - a pretty exciting moment.
Why did you decide to work in yachting?
I flew to Europe in 2011 in search of my first yachting job. I had some friends who joined the industry a few years prior, and the chefs seemed to have a really amazing job.
How many boats have you worked on?
I’ve been in the industry for over ten years and during this time, I’ve worked on seven boats. Not as many as you would think, but I think that’s a good thing.
Which is the most exciting boat you have worked on? I spent some time on a boat that travelled around the world with a team of scientists. They explored various
reefs and oceans, with the aim of classifying new marine conservation areas and reserves. I found this fascinating, it was incredible to be a part of a crew that were protecting our eco-system and the oceans.
What has been your most exciting guest experience? I’ve cooked for some pretty incredible guests, the most
exciting was when I went out to greet a group after dinner and one (a very famous movie star) started to mimic my South African accent. He had lived in Cape Town for a year, whilst filming and mastering the accent for a movie. He had me in stitches of laughter, I tried to hold it together, but it was too funny.
Describe your favourite menu from a recent trip?
I recently freelanced on a charter yacht in Sicily and the guests were Sicilian, so my plan to ‘wow’ the guests
with local dishes went out of the porthole. However, the best thing happened. The guests loved to cook, and they joined me in the galley to cook together every evening. The simplicity of the cuisine was striking, we did not use onion or garlic for example, ingredients often associated with Italian cuisine. This experience taught me that even though I am well trained and qualified, there is always something new to learn and a different perspective.

BANANA FLOUR Flour made from dried ground green unripe bananas may sound a bit odd but its popularity is growing. Prized for being grain and gluten-free, banana flour is also rich in potassium and gut friendly fibre.
IN: BLACK BEANS Swap black beans into pretty much any recipe that needs flour for a gluten-free protein hit. Just whizz a can (drained and rinsed) in a processor in place of an equal amount of flour. Swapping out flour for a can of black beans in brownies is a great way to cut out the gluten and fit in an extra dose of
