In conclusion, Julien also wanted to highlight the fact that different coating equipment and processes can greatly affect the final cost of a confectionery product even when using the exact same ingredients. “Modern technology can offer energy savings, for example, by circulating the cold air in an enclosed system,” he says. “Automated control of chocolate, polish and glaze distribution can offer savings on the quantity of ingredients needed to produce a batch, by reducing product spoilage and, finally, productivity can be increased by reducing the manpower needed on the production line and helping to reduce the time taken for cleaning and maintenance needed between batches.”
