Catching a moment at The British Franchise Exhibition back in June, Flora Neighbour sat down with Broccoli Pizza & Pasta’s European franchise sales manager, Charlie Mander, to talk about the future of the franchise
B
ecoming a franchise in 2012, Broccoli Pizza & Pasta has now set its sights on the UK, and the European franchise sales manager, Charlie Mander, is at the forefront
of these efforts. Founded in Dubai, Broccoli Pizza & Pasta saw the gap in the market for a fast-food pizza and pasta line with a high- quality range. Launching in the European market last July, the restaurant is looking to set up shop in 14 sites across the UK.
Why did Broccoli Pizza & Pasta decide to franchise? We knew the best way to grow this unique business model was to franchise it. After looking at the market, we found there was a lot of competition for pizza, but not so much for pasta. The business also has something that others haven’t by using HMC-certified [Halal Monitoring Committee] meat as an alternative for Italian cuisine.
Have there been any difficulties in the franchising process along the way? We always run the first store in a new country ourselves, so we can find any issues and sort them out before handing over to franchisees. Staffing is often difficult, but if you go to a university town, you can always rely on the students for part-time staff.
What training and support do you offer franchisees?
Franchisees have two weeks’ training: one week of theory and one week practical. When the franchisee opens their shop, we
introduce them to our director of operations, who has 20 years’ experience in the pizza industry. He ensures that the customers have a positive experience. We offer lifetime support and ongoing training free of charge for all our franchisees. If the franchisee and the staff are trained to the nth degree and become streamlined, then
the whole process will only improve and the business will continue to expand.

What has been the biggest highlight so far for the company? I think it’s been offering the population a whole new concept of food. There’s a lot of competition in the industry but there’s nothing like Broccoli Pizza & Pasta. Seeing the business
