Simit Sarayı is growing at a rapid pace in the UK. Here, Flora Neighbour chats to Caner Yazar, Simit Sarayı’s franchise director, about the bakery franchise…


How did Simit come about? Explain the history of the business... Simit Sarayı opened its fi rst store in 2002 with the aim of promoting ‘simit’, a traditional Anatolian delicacy, to both Turkey and the world. Beginning with a simple concept to serve fresh simits to guests at any time of day, Simit Sarayı has grown from its fi rst store in Mecidiyeköy to 408 stores across the world. Since launching in 2002, the company has steadily evolved, building its own production facility in 2005, opening its fi rst bakery in the Netherlands in 2010, which was the bedrock for European growth, to launching its new architectural concept in 2012. New milestones are hit on a regular basis, meaning the company is never standing still. Now, Simit Sarayı is operating in 21 countries, like Germany, Saudi Arabia, the US, Belgium, Sweden, the UK, United Arab


Emirates, and is serving one million guests each day.


What was the motivation behind the company?


The original goal of the company remains the same: to become the most recognised and widespread food chain in the world. It continues to work towards this by offering an ample range of products, having the most up-to-date technology in its production facility, and by ensuring its approach to business remains innovative. We are delighted to be on this path.


Why did the business decide to franchise? It is an effective growth strategy. Franchising provides onsite management and operational profi tability, which increases the growth momentum. When this fast growth


momentum is controlled and supported with the correct mechanism, it brings success in retailing.


Was it a diffi cult process?


The most important point for a successful franchising system is being at the right place and operating with the right investor. In this process, the fi rst point as the business owner is to maintain a sustainable profi t model. Then you need to merge the business with the right investors within the right location, which will lead to success.


What support and training do you offer your franchisees? Simit Sarayı always provides continued support to all our franchisees, from fi nding the right location to training the managers and employees. Depending on the country, we
