engaged a mystery guest chef who cre­ ated, cooked and served a four course ; dinner, 'with a little help from the kitchen staff. After the pudding course all would be ■


revealed, but more of this later. My husband, Vic, and I enjoyed a won­


derful four-course dinner full of innova­ tion and taste. From a puree of petit pois with a coconut milk foam (the latest in- thing is foam) to a traditional country offering of belly pork-not just ordinary , belly pork but tender chunks served with sherry, chilli and spring onion salad. What a combination to set the taste-. buds alive.


It was a difficult act to follow, but yet •


■again the chef excelled himself with a '' wonderful combination of roaked fillet- of salmon served with British asparagus and pancetta bundles, honey and dill, Ormskirk new potatoes and a classic hollandaise sauce, cooked to perfection - and which melted in the mouth. It just . goes to prove how you do not need exotic vegetables when only a few miles awayyou can obtain fantastic local homegrown potatoes. If your mouth is not already watering

the name on the label states Mas - v Macia 2006. It would be an excellent wine to be included in a blind tasting, as it is produced from the Xarel-lo grape variety, one I am' sure that not- too many of us are familiar with! If you were tasting it'blind', you


- would get on the palate a dryish, fruity tast'e, a hint of melon and . honey with a butteriness that would


suggest the chardonnay grape. : - v T h e pale straw colour has a sparkle to it, although the wine is not of the fizzy variety.


. It is 12% alcohol by volume, which ! makes it easy to drink, and like sum- -


. mer white wines would be excellent; with most food, but could be drunk - on its own as an aperitif or even , .■ - throughout a special party night.
