WE have plenty to celebrate and much to be proud of with our homegrown English wines. The 2006 production figures


have been declared and show a healthy 3.4 million bottles, the highest since records began. The area under vine has increased as have the number of registered vineyards - currently 362. Our vineyards are concentrat­


ed in the South, where the South Downs chalky soils suit sparkling wine production, but there are vineyards in Wales, the Wash even as far North as Leeds and Sheffield. Most of our production is


sparkling and white wines, but a handful of very ripe and fruity reds are available, made with such grapes as Pinot Noir (also important for sparkling white wines), the very fruity Rondo, or the equally velvety soft Dorn- felder. For our whites we specialise in


such varieties as the refreshing Seyval Blanc, the big richly tex­ tured Ortega or the very Sauvi- gnon Blancish Siegerrebe (with a touch of c a t’s pee on the nose!). To help you support the Eng­


lish wine industry, try an Eng­ lish wine at the weekend. To help you on your way, Booths have English wines on taste in store and D. Byrne and Co. is also currently showcasing a selection. Booths will have available a


range from Chapel Down, based in Kent. Serves: 8 Prep, time: 15 mins To cook: 90 mins INGREDIENTS:


• 180g caster sugar • 1 tsp white vinegar • 1 tsp corn flour • 2 kiwis (peeled and sliced) • 10Og strawberries (washed and cut in half) • 3 passionfruits (cut in half and scoop out the pulp)


• 3 egg whites (whisked) • 1 tsp vanilla essence

• 250g fresh pineapples (discard the skin, core and cut into chunks)


• 1 papaya (peeled, de-seeded and sliced) • 300ml double cream • 3 tblsp Limoncello liquor


METHOD:


• In a large clean dry bowl, using an electric whisk, whisk the egg whites until stiff. Whisk in the sugar a little at a time until stiff and very shiny. Now with a hand whisk, whisk in the vinegar, the corn flour and the vanilla essence.


• On a non-stick baking sheet, using an upturned bowl and pencil, draw a 20cm circle and turn the baking sheet over. Then pour the meringue on it making sure that there is a substantial hollow in the centre (create a basket).


• Once ready, bake at 120°for 90 minutes or until light brown and dry.


• Press lightly with the finger to test that it is a little soft in the centre. Leave to cool on a rack and peel away the baking sheet.


• In a large bowl whisk the double cream until soft peaks form.


• In a separate bowl mix all the fruits together with the Limonceito liquor.


• Spoon the whipped cream into the Pavlova and top with the mixed fresh fruits
