A MEMORABLE concert is being planned to mark the retirement of Dr James Eastham after 29 years as conductor of Blackburn Music Society, the town’s oldest mixed choir of some 70 voices. Dr Eastham, who recently celebrated his 75th


birthday, has throughout his tenure of office enhanced the reputation and exceptionally high standards established by his predecessor, Mr Horace Tattersall. Erstwhile horn player with the Royal Philharmonic Orchestra and Senior Lecturer in Composition at the Royal Northern College of Music, Dr Eastham has forged invaluable links with other vocal groups, such as the Salford Choral Soci­ ety, Keighley Vocal Union, the Nelson Arion Male Voice Choir and Altrincham Choral Society. M ET H O D :


• B oil the sweet potato for about 40 minutes until tender.


• Drain, cool and peel then mash the potato well.


• A d d the finely chopped spring onions and red pepper to the mashed sweet potato.


• C h o p the broccoli finely, discarding the stem (you really just want the flower he a ds chopped)


• Th en stir the chopped broccoli into the sweet


potato along with the seeds, Thai paste, lime rind and flour.


• M ix well then shape into sma ll burgers, not too thick or they won't coo k through.


• Ro ll each burger in the oats patting them down . well to make the oats stick.


• Heat the oil in a frying pan until s iz z lin g, then fry


the burgers for 2 to 3 minutes on e a ch s id e until golden.
