PARMA HAM & PEA POTATO CAKES BY CHINC-HE HUANG


Serves: 2 Preparation time: 30 minutes Cooking time: 5 minutes


INGREDIENTS:


• 200g potatoes • 50g plain flour • 1/2 tsp salt • pinch pepper • 25g melted butter • 40g frozen peas, defrosted


METHOD:


• Wash and scrub the potatoes leaving them unpeeled. Boil the potatoes in lightly salted boiling water until they are tender. Drain and set aside the potatoes in a hot saucepan to dry in their steam. Once cooled, peel off the skins.


• Mash the potatoes coarsely then add the peas and cooked Parma ham and combine.


• Season with salt and freshly ground pepper, pour in the melted butter.

tory. Taking place this Saturday, July 14th, it will be led


by local historian and Clitheroe town councillor Simon Entwistle and is part of the Lancashire County Archae­ ology Service’s successful “WalkPast” programme. Renowned for his encyclopaedic knowledge of local ghost stories, Simon has the happy knack of bringing history to life and his tour will include stories of the many heroes, villains and legendary characters of the

AN outstanding seven-piece 1930s/40s Parisienne swing group will play not-to-be-missed gigs in Mit- ton this weekend and Clitheroe next Wednesday. “The Kings Cross Hot Club” is an acclaimed


young group currently undertaking an extensive UK tour, but two of their line-up had a special reason to include a Clitheroe date on the itinerary. Guitarists Phil Grispo and Bruce Beach share a fascination with British black and white films and can’t wait to investigate the home town of one of their screen idols, Jimmy Clitheroe. The group, pictured, have been played repeatedly


on Humphrey Lyttelton’s BBC Radio 2 show, where the host lavished praise on them and said: “Gypsy Phil Grispo is the greatest living guitarist in the UK today”. They also have a growing following among Lindy


hop and jive dance enthusiasts. The line-up com­ prises two acoustic guitars, double bass, piano, vio­ lin, trumpet and female vocal from talented Katja Prudinski, who is fluent in seven languages. Locally their gigs will be Blackburn Arts in the


Park festival, at Witton Park, on Saturday at 2-30 p.m.; the Aspinall Arms at Mitton on Saturday at 8-30 p.m.; the Key Street music bar, in Lowergate, Clitheroe, next Wednesday, July 18th, at 8 p.m. For those willing to travel a bit further, they are also playing Grassington Town Hall on Saturday the 21st.
