CELEBRATE Easter Day this year with an exquisite
cake using passion fruit; The p la n t was so named by
'Christian missionaries who used the flower to sjrmbolise the “P a s - : sion of Christ”, his suffering a t the crucifixion, to th e indigenous natives in South America.

families visit their relatives who live away, so i t is nice to make something a little different to take as a gift if- staying away, or to have something special to serve when
. people call in as planned or unex pectedly. Because Easter usually signals
the beginning of spring many peo ple sta rt tidying the garden and clearing out the greenhouse while others think its a good time to do
Preparation and cooking time: 50 minutes plus cooling
: Makes 1 x 17.5cm/7-in.’ two-layer cake
Ingredients • 225/Soz butter or margarine
• O 225/Soz caster sugar • 3 eggs, beaten 9 V2
For the filling

Mascarpone . • 200ml/7fl.oz. creme fraiche ' • 1 tbsp caster sugar • 4-5 passion fruit
Method 1. P reh ea t the oven to 180C, - I teasp vanilla extract
. •100g/4oz desiccated coconut ^ • 150g/5oz self-raising flour .

a spoonful of the flour and carry o n .. ■ 4. Fold in the coconut and flour
and mix well. Divide the mixture between the prepared cake tins and bake in the centre of the oven for 25 minutes. Try not to open the oven door
before 20 minutes cooking time. 5. Remove the cakes from the oven and allow to cool for 5 min-'
utes before turning onto a wire rack. Carefully peel off the paper and
allow to cool completely. 6. Place the cream cheese, creme fraiche and sugar in a mixing bowl
and beat until well blended. Set aside.
: 7. Cut each passion fruit in half and scoop the seeds and pulp out into a bowl. 8. Once the cakes are complete-
