FILLET STEAK WITH TARRAGON
THIS 17th Century dish must have been a blessing for French chefs. It takes scarcely any time to cook, but is sophisticated enough to please the most exacting nobleman. Use lots of fresh tarragon for a sharp
and delicious contrast to the creamy sauce. Try to buy French tarragon it has a fine, aniseed-like flavour. My husband, Vic, and I have just
returned from the South of France where we celebrated our ruby wedding at the St Tropez home of two very good friends, together with eight more dear chums. On mm actual 40th wedding anniver
sary day the party of 12 travelled to a beautiful restaurant in Ramatuelle, about half-an-hour inland from the coast. The restaurant L’Ecurie du Castellas is situated high above the old village of Ramatuelle and from the terrace you can see the beaches of Pampelonne in the distance. The dining room, with -views of the
countryside is decorated in traditional Provencal colours of blue and yellow and is awash with fresh flowers, pot tery and French antiques. Here we all

Isobel’s main course was partridge with lemon sauce, while David andKaren had the special shell fish which were nearly as big as lobsters. I had the delicious scallops with fennel and asparagus and Vic, John and Renate had fillet steak. Some of the party even had a dessert, Philip enthusing over his lime- flavoured ice cream with vodka and others had rhubarb soup with raspber ries, accompanied by a little pot of mint sauce, all beautifully decorated with chocolate. All this was washed down with mag

The menu was extensive with many delicious sounding dishes, Jacques and myself went for the warm fresh goose foie gras on a bed of figs and apples while Vic and David made short work of their ravioli stuffed with snails and chanterelle mushrooms. Isobel had potato skins stuffed with mushrooms and Denise’s ravioli was also stuffed with wild mushrooms.

1. Melt the butter in a frying pan
over a medium heat and cook the mushrooms on both sides until golden. Reduce the heat and keep warm. 2. Heat a little olive oil in a saucepan
over a medium heat and fry the shal lots until soft and golden. Add the wine and simmer for three minutes, then reduce the heat and add the cream, mustard, garlic, tarragon and seasoning. Gently warm through. Do not allow to boil. 3. Heat a drizzle of olive oil in a large
frying pan over a high heat and fry the steaks: 1)^ minutes each side for rare; 2 a minutes for medium; and 3 minutes for well-done (if you must). Serve the steaks on the cooked mushrooms topped with the sauce.
