steaks was at Victoria Falls, in the Jungle Junction restaurant. This time it was done on a hot griddle


while we waited, but was not as juicy or tasty as the previous dish. The red meat of ostrich has many


excellent qualities. It is very healthy with a fat content of less than 0.5%, has a very low cholestrol content and it is high in protein. Owner of the ostrich farm Kerry


McNickle recommends that to obtain best results the meat should be cooked quickly to seal and served

Ostrich stroganoff Ingredients (serves four)


O 1 ostrich steak, cut into thin


strips • salt and pepper


9 'A cup white wine 9 l'A tbsp butter • 1 onion finely chopped

• Klb mushrooms, sliced • 1 tbsp tomato puree • 4 tbsp sour cream • 2 tsp Dijon mustard

1. Marinade meat for one to one- and-a-half hours in the wine, stirring


occasionally. 2. Saute the onions and mush­


rooms in some butter. 3. Dip meat in the flour, season with salt and pepper and saute on a


skillet for five minutes. 4. Add tomato paste, wine and


sour cream to meat.' Cook for five minutes, stirring occasionally. Chef's tip: Do not allow to boil. Serve over buttered noodles.

Mr Fisher's career began m 1962 when ,
