Method 1. Peel and chop the onion and
tomatoes are extremely good for us, particularly for our hearts. Tomatoes which are a little yellow or green are easily ripened by leaving on the windowsill for a few days. This recipe, from the Cook
Pack by Gary Rhodes, is perfect for this time of year to get the full benefit of lovely ripe tomatoes
and fresh basil. The soup is full of fresh tomato
flavour and has a wonderful, smooth texture. By using ripe tomatoes you get a rich, red soup, stunningly garnished with basil and a drizzle of olive oil. You could also serve this soup chilled. Ingredients (serves two)
© half an onion © 1 small potato ® 1 tbsp olive oil, plus extra to
potato into small diced pieces. Heat the oil in a pan and add the onion and potato. Cook on a low heat for 10 minutes until softened. 2. Chop the tomatoes and add

stock..Sea- son and cover with a lid. Simmer
for 25 minutes. 3. Blitz the soup until smooth
in a processor, blender or with an electric hand-held blender. 4. Pass through a sieve into a bowl and once cool, cover and

taste. To serve: Pour warm or chilled
soup into bowls and drizzle over a little olive oil. Garnish with basil leaves.

AN unsung hero is to be found in the mighty work horse grape vari ety of Southern France,
Garnacha, is a grape that likes the hot
i and Spain, where it is called the
Grenache. The second most widely-planted red grape variety in both France

climate. The gnarled bush vines that are the
feature of Grenache, are tolerant to, and indeed positively thrive in, hot arid con ditions like the Midi, where the mistral wind blows hot and long. The grape itself is, therefore, likely to benefit from a long growing season, a ripe sugar level and, if unirrigated, a small yield of grapes. All this gives you a grape which is high in potential alcohol. It is exactly what is needed when used as a blend as in Chateauneuf-du-Pape. As a grape variety on its own there are three styles - straightforward juice,
