OUR Dish of the Week recipe comes directly from 10 Downing Street, albeit via a newly launched cookery book entitled "A Taste
from Gisbum”. This well-produced book contains
100 original recipes and has been • compiled by Mrs Linda Farnworth and Miss Joanne Fellowes, in order to raise much-needed funds for two worthwhile local causes. Proceeds from the sale of the book
arc to go to the Festival Hall and Memorial Garden funds in the pic
turesque village of Gisbum. Recipes in the book come from
many notable cooks in the village, including Mrs Farnworth, of the Cottage Restaurant, Mrs M. Bargh, of Nappa Manor Farm, Masterchef f inalist Mrs Maureen Bowe and Gary Simkin, head chef, at Abbey Gisbume Park. Among other budding chefs who
feature is our very own Editor, M r Leigh Morrissey, with his Smoked Salmon Pasta; Ribble Valley M P Nigel Evans who supplies a recipe for Orange and Honey Chicken and Lan-
cashire Mash; and the Editor of the Leader Times Series, Mr Roy Pren- ton, who has submitted his favourite
Italian tomato sauce. There are many, many more tried

445441. MEATBALLS AND TOMATO
SAUCE
Ingredients (Meatballs)
• 500g minced beef • 3 cloves garlic, chopped • 2 tbsp chopped fresh mint and
parsley • salt and black pepper
• le g g • 2 tbsp olive oil
Tomato sauce
Q 400g can of chopped tomatoes • 1 chicken or vegetable stock
cube • 2 tbsp white wine
• 1 large onion, v ery fine ly chopped • 2 tbsp olive oil • 1 fresh red or green chilli,.
deseeded and chopped • 1 tbsp fresh parsley, basil or
coriander, chopped « salt and freshly ground black
pepper Method 1 Put the tomatoes and their juice
in a wok with the crumbled stock cube, wine, onion, olive oil and chilli. Add the herbs, a little salt and pep per, bring to simmering point, cover and let it bubble away for 5-10 min-
Ut?. Mix together the mincemeat, garlic, fresh herbs and salt and pep per. Break the egg into it and mix it up with your hands. Form the mix ture into meatballs the size of table-
tennis balls. . , 3. Heat the oil in a frying pan and
fry the meatballs gently for 7-10 min utes. When they are cooked through, add them to the tomato sauce and serve with spaghetti, cooked a dente. Chef's note: omit the chilli from
tomato sauce if you do not like your food hot.
