Jenkinson's main concern is that their customers should feel pam pered and relaxed while eating their lunch or having morning cof fee or afternoon tea. Their menu offers an incredible
range of food, from sandwiches, home-made soups, hot dishes, and tasty snacks together with a wonder ful array of cakes and puddings. The couple pride themselves on
serving many traditional favourites and this week's recipe for Lancashire parkin is such a one. At the moment they are celebrat
ing Hallowe'en, because of the local connection with witchcraft and this will run through to bonfire night. So there is still just time for you to pay them a visit and try the traditional pumpkin pie, treacle toffee and Lan cashire parkin. The Caprice, being a member of
the Tea Council, will be serving gun powder tea, a China green leaf blend that produces a light, refreshing tea that is served without milk. However, for your bonfire night why not make some Lancashire
parkin using Joyce's recipe. LANCASHIRE PARKIN Ingredients
9 8oz. oatmeal O 3oz. plain flour 9 1 level tsp ginger 9 l/2oz. bicarbonate of soda 9 2oz. brown sugar 9 4oz. lard
9 8oz. treacle and syrup mixed
9 21/2 f 1 oz milk Method
1. Melt the sugar, lard and syrup
over a low. heat. 2. Mix the oatmeal, flour and gin
ger in a bowl and add to the cooled, mixture, add the bicarbonate of soda, mixed into the milk. ■ 3. Mix and place in a lined and greased baking tin. Bake for one-and-

Baume, in France, and Caliterra, in Chile. It is a little like our high street electrical firms - you think you are buying from a different company, but end up putting your money into the same "pot". However, with wines you do have a
chardonnay, it is very refreshing when blended with a little semilion. So my two choices are very different,
but the same blend. Firstly a Hardy's "Stamps of Aus
tralia" Semillon/Chardonnay, from Tesco (on special offer at £1 off) is at present £3.49. It displays the best characteristics of each grape variety - the herbaceousness of the semilion and the ripe tropical peachy richness
of the chardonnay. Second choice is the Barramundi
Scmillon/Chardonnay, again from Tesco but no price reduction this time, at the full price of £3.99. I t is worth every penny, except the label, which might put some discerning drinkers off. The wine is pure sun shine, typically Australian, full-bod ied, very ripe with a tropical fruit cocktail of flavours all enhanced with a touch of oak. Very easy drinking, and right for an aperitif.
