: And on Monday Mrs Holt said she was “tickled pink,” after receiving her award from AA represen
tatives. To c e le b r a t e , she
served a ' mouthwatering luncheon of hors d’oeuvres, steak and kidney pie and roast potatoes, and ap ricot sundae.
Mrs Holt, who previ
ously ran a , secretarial agency and a sports shop before coming to Slaid burn, reckons it must be her home cooking which draws a full house every night during the eight- month season. “The general atmos
phere and welcome you give your guests are also vitally important,” she said. “Some diners during their meal suddenly asked to see the lambs on the farm, so of course we had to oblige and take them out.”
She didn’t find out until
later that those guests were some of the A A “spies” who visited about 1,000 farmhouses before choosing Parrock Head as the North of England winner. Mrs Holt does all her
own cooking and baking, with definitely no “con venience foods.” She has not had any catering training, but reckons tha; 25 years of cooking for a family is training enough for anyone. She is supported by her
husband, Richard, and her son,’ Stephen, runs the farm. She also has seven local girls who help out full-time and part- time. This is Mrs H o lt ’ s
second acclamation for Parrock Head, for in 1977 it received a British Tour ist Authority commenda tion which has been re newed every year since.
