Tableside-made creations are increasingly cropping up at London’s top restaurants


Negroni know-how


The London outpost of Los Angeles joint LAVO has introduced a negroni trolley to give guests a taste of the action. Located at The BoTree hotel in Marylebone, the Italian restaurant handcrafts the cocktails tableside, combining a Campari core with your choice of base (gin, vodka, bourbon, rum, tequila, whisky and mezcal), essence (Antica Formula, Vermouth Del Professore Rosso, or 1757 Vermouth di Torino GI Rosso) and finally a finish of grapefruit, coffee, chocolate or rhubarb. To top it off, customers will be gifted a Negroni pin to mark the moment.

Mandarin Oriental Mayfair debuts its sky-high bar


MANDARIN ORIENTAL MAYFAIR is celebrating its debut winter season with a new rooftop bar, helmed by Akira Back – the chef behind the hotel’s existing F&B venues. Accessible by private lift, the 50-seat ABar Rooftop offers scintillating cityscape views thanks to its floor-to-ceiling windows and outdoor terrace. Guests can embrace their favourite season regardless of the time of year with cocktails divided by Aki (autumn), Fuyu (winter), Haru (spring) and Natsu (summer) – including creative concoctions such as an artichoke-infused whisky and thyme number. Soak up the spirits with bites ranging from salmon poke bowls to Wagyu burgers and sushi tacos – while DJ sets fill the skies from 7pm-11pm, Thursday-Saturday.

Maison François might be set in the capital’s St James’s district, but the restaurant’s French cuisine and savoir-faire transports you overseas. Its tableside ‘à la minute’ preparation of steak tartare sees chefs combine beef with a signature spice mix and a scattering of traditional accompaniments – from capers, shallots, cornichons and fresh chives to Tabasco and Worcestershire sauce condiments. Finish it off with crunchy anchovy breadcrumbs and the house seed mix – or succumb to indulgence and enjoy it served on rich bone marrow. The trolley itself is a sight to behold, crafted by Rewthink from sustainable wood and brass.

Chef Tom Sellers keeps things playful with a pair of Knickerbocker glory trolleys at Dovetale, the restaurant at 1 Hotel Mayfair. Prepare for nostalgia with this 1930s dessert, and spot guests getting giddy with excitement at the handmade ice creams and toppings galore – pick from marshmallows and candied pecans. The sundaes set you back £18, but don’t come close to the £55,000 price tag of the brass trolleys. Nicknamed Apollo 11 and 13, the trolleys have been designed by Seymourpowell, a London- based agency behind the interiors of Virgin Galactic spaceships.
