What’s the job of a head brewer? I manage the team of brewers, which consists of two other guys. We’re short-staffed, so we end up doing a lot. The job is a catchall.
What would most people be surprised to find out about what you do? People don’t realize that brewing is really 80 percent cleaning. The other 20 percent is the actual beer- brewing process.

What’s trending in the beer world right now? Sour beers are becoming more popular. It’s going to be interesting to see how far and how long that trend goes. [Sours have] been around for centuries, and the American beer market is just now picking it up.
Can we expect new Concrete Beach brews this summer? Last summer we produced a mango gose beer, which we’re bringing back this year and packaging into cans. Gose is a sour wheat beer, and we’ve added fresh lime zest, mango and sea salt to it. It’s super refreshing and perfect for summer. The slight salinity keeps you refreshed. We’re also celebrating our social hall’s two- year anniversary and are introducing a Havana Lager that we’re really excited about. ■ Virginia Gil
