Soil, Athens Soil is a fi ne dining restaurant housed across two fl oors of a beautiful neoclassical building, situated a mere stone’s throw from the former sporting heart of the Greek capital, the Panathenaic Stadium. It likely came as no surprise to Soil regulars when the restaurant, guided by chef Tasos Mantis, retained its Michelin star. It’s also one of the only restaurants in Athens that has been recognised for its eco-conscious eff orts, too. Soil was awarded a Michelin green star for its sustainable, farm-to- table ethos, where ingredients are sourced from its own garden of edible fl owers, fresh vegetables and rare herbs. Ishibashi Sukiyaki, Tokyo Founded in 1879, Ishibashi Sukiyaki was one of the fi rst restaurants in Japan to serve beef.
