As a growing number of people cut meat, dairy and eggs from their diet, a plant-based Christmas is no longer the outlandish idea it might once have been. From breakfast right through to dessert and late-night snacks, vegans can indulge themselves just as much as omnivores. Here are our ideas for a day of plant-based celebrations.


Breakfast: Pancakes Kick off your festivities with an indulgent breakfast of fluffy American pancakes. Tere are plenty of recipes around for plant- based versions, which involve swapping the milk for an alternative of your choice (something nutty,

like almond or hazelnut milk, works well) and omitting the eggs. For an extra-Christmassy touch, try adding a little cinnamon, nutmeg or ginger, and fold crushed nuts into the batter. Drizzle with maple syrup and serve.


Starter: Winter salad For a light start to Christmas dinner, a winter salad is just the ticket. And the best thing is, you can use almost any combination of vegetables. Try tossing hunks of fennel and roast celeriac or turnip with stir-fried kale or cavolo nero. Alternatively, for more of a crunch, swap the greens for shredded raw Brussels sprouts or red cabbage. Liven the whole thing up with a scattering of pomegranate seeds or fresh clementine segments, and a tangy citrus dressing.


Main: Pie and festive veg A pie makes the perfect centrepiece, whether you’re making your own pastry, or buying it in (most ready-made pastry happens to be vegan, just check the label). Fill your pie with an earthy stew, such as mushroom and chestnut, or beetroot and red wine, and serve it with all the classic Christmas


vegetables and a caramelised onion gravy.


Dessert: Chocolate mousse Mousse is a real crowd-pleaser of a pudding. Some vegan recipes involve simply melting and whisking good-quality chocolate with sugar (or agave syrup if you prefer) and perhaps a little vanilla, and then refrigerating. For a mousse with a little more body, try adding whipped aquafaba (chickpea water, which makes a great egg-white substitute), or silken tofu that’s been blitzed until smooth. Sprinkle with a little salt to really bring out the flavour.


Supper: Cheeseboard Even if you swear you’ll never eat again after your Christmas dinner, you might find yourself peckish and in need of a late-night snack. Enter: the cheeseboard. Yes, a classic cheeseboard is emphatically non-vegan, however, there’s a whole array of plant-based cheeses out there, from cashew camembert substitutes to herby soy spreads. If you’re feeling adventurous, you could even try making your own. Serve them with crackers, grapes and a homemade red onion marmalade or chilli chutney.
