Villa Maroc is a family owned and managed hotel, which opened its doors in 1990. The Oriental Spa is the perfect place to unwind after spending a day touring the markets and souks of the Old Medina, especially if it’s followed by a fireside dinner in one of the many salons scattered throughout the property. The


first floor of the hotel is transformed at nightfall into a beautiful candlelit restaurant showcasing the best of Moroccan cuisine. The philosophy behind the restaurant is to share dishes not often found on traditional restaurants’ menus but rather in the homes of Moroccan families, or around festive events, such as Eid, weddings and other big celebrations. The team of chefs peruses the markets of Essaouira every morning for fresh, seasonal and local ingredients to create a menu that changes every day. The importance of using the best ingredients


has led the owners of Villa Maroc to create their own farm, the Domaine Villa Maroc, home to the olive grove that produces its multiple award-winning olive oil, Argan trees and an organic vegetable garden. All the produce supplies the kitchen at Villa Maroc as well as the Oriental Spa, where the garden’s organic argan oil is used for all treatments. Visiting the Domaine is a must, especially if you’re there between mid-October and early December: the olive harvesting season.
