A taste of little Italy on the streets of busy Dublin. On the slow walk from the Guinness


Storehouse, working up an appetite from the tour (minus the multiple Guinness pints) a search for food was next on the cards for the editorial team. Indian?


Chinese? McDonalds? So many


options, yet, no one is willing to make the final decision. In times like this, the best things come to those that wait - and oh yes, this was the best. Standing out from the dark night sky showed the beautiful red shining light - ‘PROOF’. One look in the window at the authentic woodfired pizza oven nestled in the corner of the restaurant and these three girls were sold. Swathed promptly by our fantastic waiter, after a quick check at their evenings bookings, it was time to settle in and explore the menu whilst watching the world


go by. The high top marble tables glistened under its ambient light and the minimall, modern decor highlighted the beauty of the elongated room. Little half sheer curtains draped over the wall-length windows, reflecting the skillful pizza chef as he crafted his next dish. Soon to be ours, thankfully! The single paged menu made decisions difficult, almost beyond those of choosing a place to eat in the first place. Pizza, pasta, arancini and an early-spotted tiramisu; we knew we were in for a treat. Whisked off to the kitchen and within a brisk


10 minutes delicious pizzas and chicken parm arrived at the table. Chips cooked to perfection, generously soaked in truffle oil with lashings of parmesan. The pizza bases were crispy yet chewy, with toppings proofing to be the star of the show! A pleasent aurprise for our tired feet and hungry tummies. Proof should be high on the list of those looking for top italians in Dublin.
