he microwave has been reinvented since its commercial introduction in 1947, evolving from a solitary mon-
strous six-foot-high box into a vast range of compact cooking machines. The once revo- lutionary technology has made it so much easier to quickly heat up food, and machines nowadays can offer a great variety of functions and programmes. However, it’s a long time since the standard microwave was the only rapid cooker in town. The progression of rapid cooking equipment is shown by the popularity and effectiveness of accelerated cooking machines. ing microwaves available for front of house, and many designed for high street food-to-go operations that are short on space. Contact grills use a combination of heated plates and pressure to cook food quickly, and are very compact. Specialist high-speed sandwich presses are a great option for products like panini. These machines combine radiant heat and microwaves to greatly reduce cooking times, with some models capable of grilling a toastie to perfection in less than 60 seconds.
