he climate crisis should be at the top of everyone’s agenda. That’s why, in this 2020 edition of The Caterer CESA Equipment Guide, we’ve focused on sustainability. You’ll find each category of equipment has a section on sustainability ideas, which have been put together


by experts from each specific area. In foodservice, developing a more sustainable kitchen will play a crucial role in meeting our


green targets. The catering equipment supply industry understands that achieving the govern- ment’s goals, such as reducing energy consumption, is adding to the foodservice operator’s burdens. Sustainability, waste management, energy management and rising food costs are all key ‘pains’ that affect everyone running a catering operation. The Intergovernmental Panel on Climate Change focuses on areas such as affordable clean energy, responsible consumption, decent work conditions and wellbeing. Those operator pains and the government goals are directly linked – and in terms of commercial catering equipment, we need to ensure appliances are properly looked after so that they run as efficiently as possible. Which is why training staff and investing in a mainte- nance contract are essentials. And, when it comes to specifying new equipment, buyers need to be looking for the most efficient models, which have the least impact on the environment and which have been built to last. Of course, as overheads and energy costs continue to rise, it makes commercial sense to invest


in more efficient equipment. At least two-thirds of the lifetime cost of most appliances is their energy use, so buying more energy efficient equipment will save money, both in the medium and long term. Plus, it’s better for the planet. I hope you enjoy the guide.
