is the boiling kettle or steam-jacketed kettle. These use steam to prepare many different menu items, including soups, stews, puddings, sauces, pasta, eggs and rice. The heat is trans- ferred to the food by conduction, via the kettle wall. When connected to cold water, steam ket- tles can be used for tasks such as cooling hot foods and mixing cold salads and dressings. Bratt pans are another key bulk cook-


ing appliance. The original bratt pans were shallow pans used to braise or grill meats (bratwurst, etc) in Europe. The concept made its way to the US in the 1960s and was modi- fied to produce a pan with higher sides and a cover to make it even more versatile. There are now new, hi-tech bratt pans, often


called vario-pans or flexi-pans, to reflect their versatility and multifunctionality. Like a combi oven, they can mimic a host of different appli- ances’ cooking processes, and thus replace several pieces of equipment. Like a combi, they are very energy efficient; unlike a combi, the pans apply heat directly. A vario-pan or flexi-pan can combine the func-


tions of a kettle, fryer, griddle, bratt pan and tilting pan in one unit. It can pan fry, boil, steam, confit and deep-fry. Already popular on the continent, these pans are gaining market share in the UK, too. That’s not surprising, since they offer part of the solution to several key kitchen design issues: by replacing several appliances they save space; reduce costs by saving energy; they are fast, so can speed up service; and many have advanced cooking controls that can save staff time.

● Appliances that use pressure cooking can significantly reduce cooking times, saving energy. They may also increase food yield.


● Some modern appliances feature smart heating systems that only provide energy (heat) where it is needed.


● Check how easy it is to clean the equipment. Automatic cleaning systems can save time and water.


● By replacing several appliances, multifunc- tional equipment can reduce the kitchen footprint and its overall energy consumption.
