LINGUINE WITH MEATBALLS AND ROASTED TOMATOES

MEATBALL AND MUSHROOM HOAGIES

STEP 1 Preheat broiler. In large microwave- safe dish, microwave 12 meatballs 3–4 min., until warm. STEP 2 Cut 4 hoagie rolls lengthwise, without cutting completely in half, and remove some of the insides. Place on baking sheet and drizzle inside of bread with 1 tbsp olive oil. Fill each roll with 3 meatballs, ¼ cup buttery sautéed mushrooms, and 2 slices provolone cheese. STEP 3 Broil 3–4 min., until cheese is melted. Toss 3 cups arugula with 1 tbsp balsamic vinegar. Divide arugula among sandwiches and serve.

STEP 1 Cook 12 oz linguine according to package directions. Drain and return to pot. STEP 2 Meanwhile, in large microwave-safe dish, microwave 12 beef meatballs 3–4 min., until warm. Add 1½ cups roasted grape tomatoes and microwave 1–2 min., until warm. STEP 3 To pot with cooked linguine, add roasted tomatoes, meatballs, 3 tbsp olive oil, salt, and pepper. To serve, garnish with ¼ cup grated Parmesan cheese.
