BROCCOLI PIZZA SUPREME
Pizza is a great canvas for veggies piling up in the freezer. Try this pizza with frozen artichokes or spinach instead.
PREP TIME 5 MIN. – COOK TIME 20 MIN. READY IN 25 MIN. – SERVINGS 4
1 (16 oz) pkg frozen pizza dough, thawed 2 tbsp flour 2 tbsp olive oil 1 (16 oz) pkg frozen mixed pepper strips, thawed ½ (16 oz) pkg frozen chopped broccoli, thawed
1 tbsp minced garlic 1½ cups tomato-basil
pasta sauce 1 cup shredded part-skim mozzarella
STEP 1 Preheat oven to 450°F. Stretch and roll out the dough on a lightly floured surface to a 16x9- inch rectangle and place on a parchment-lined baking sheet. Using a fork, poke a few holes in the dough to avoid air bubbles. Brush with 1 tbsp oil and bake 10 min., until golden. STEP 2 Meanwhile, drain any excess liquid from the mixed peppers and broccoli. In a 12-inch skillet, heat remaining 1 tbsp oil on medium- high. Add mixed peppers, broccoli, and garlic. Season with salt and pepper. Cook 5 min., until vegetables are hot, stirring occasionally. STEP 3 Remove pizza crust from oven and spread the sauce on top, leaving a ¼-inch border. Top with vegetables, then mozzarella cheese. Bake 10 min., until cheese is golden brown.

Did you forget to thaw the dough in the fridge
overnight? No problem. Keep the dough in its
plastic bag and place it in a bowl of lukewarm water. Let it sit 30 min., changing out the water once or twice until dough is soft.
