SALAD OF GREEN BEANS, TUNA, RADISHES, AND PICKLED ONIONS
GROUND BEEF TOSTADAS
This bright and fresh salad gets a punch of flavor from quickly pickled onions and an easy, breezy lemon dressing.

¼ cup distilled white vinegar 1 tbsp sugar ½ tsp salt, plus more for seasoning ½ small red onion 1 (12 oz) pkg frozen SteamReady Extra Fine Green Beans
½ (16 oz) bag radishes 2 (5 oz) cans chunk light tuna in water 2 tbsp lemon juice 3 tbsp olive oil 1 (5 oz) bag spring mix
Refried beans
STEP 1 In a small pot, combine the vinegar, ¼ cup water, sugar, and salt. Heat on medium until sugar dissolves, stirring occasionally. Remove from heat. STEP 2 Thinly slice the onion and add to pot. Stir to combine and let stand. STEP 3 Microwave the green beans according to package directions. When cool enough to handle, chop into bite-size pieces. Thinly slice the radishes. Drain the tuna. STEP 4 In a large bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste. To bowl, add the spring mix, green beans, radishes, and tuna. Drain onion and pat dry with a paper towel. Add to bowl and toss to combine.

No fryer is needed when cooking spray and a hot oven can do the trick for these super- crunchy corn tortillas topped with a mixture of seasoned beef and hearty refried beans.

8 small corn tortillas Cooking spray 1 tbsp olive oil 1 lb lean Nature’s Promise Naturals Laura’s 92% Ground Beef
2 tsp hot sauce 1 tsp ground cumin 1 tsp chili powder 1 (16 oz) can fat-free refried beans 2 medium tomatoes 2 cups shredded iceberg lettuce
STEP 1 Preheat oven to 400°F. Line 2 large baking sheets with foil. Coat both sides of the tortillas with cooking spray. Bake in the oven 4 min. per side, until each side is golden. Remove and let cool until crispy. STEP 2 Meanwhile, in a 12-inch skillet, heat the oil on medium-high. Add the ground beef, hot sauce, cumin, and chili powder. Season with salt and pepper. Cook beef until browned, 5–7 min., stirring and breaking up beef with back of spoon. Add the refried beans and cook 2 min., until warm, stirring to combine. STEP 3 Finely dice the tomatoes. Top tortillas with beef mixture. Garnish each with lettuce and tomato.
