I’M EXCITED TO BREAK OUT MY GRILL. HOW DO I INCORPORATE MORE FRUITS
AND VEGGIES INTO GRILLING? • Cut a head of romaine lettuce in half and add olive oil, salt and pepper to the cut sides. Throw on the grill cut side down on medium high heat for one to two minutes. Sprinkle with fresh parmesan or drizzle with salad dressing.
• The heat of the grill caramelizes the natural sugars in fruit, resulting in loads of flavor. Grill pineapple or banana slices lengthwise and serve with a dollop of ice cream or frozen yogurt.
• Grill stone fruit, like peaches, nectarines or plums on skewers or in foil and flavor with spices like cinnamon, ginger or mint.
IF I’M EATING MORE PRODUCE INSTEAD OF MEAT
HOW DO I MAKE SURE I’M GETTING ENOUGH PROTEIN?
The recommended daily amount of protein is 0.36g per pound of body weight—that’s 54g for a 150-pound person—and research shows that most Americans meet or exceed that every day. However, protein needs vary due to factors like age and physical activity, so you may want to consult a dietitian about your individual needs.
For an easy rule of thumb, include a protein source with most meals and snacks, but limit it to about a quarter of your plate, filling the rest with veggies, fruits, and whole grains.
Look to plant-based protein sources like nuts, nut butters, seeds, beans, and legumes. These also deliver fiber, which, together with protein, helps keep you feeling fuller longer.
I HAVE GOOD INTENTIONS WHEN I BUY FRESH PRODUCE BUT I THROW AWAY SO MUCH!
HOW CAN I REDUCE WASTE?
• Before you shop, take stock of what you have at home and make a list of only what you’ll use in a week.
• Until cut, keep these on your counter: peaches, citrus, avocado, bananas, tomatoes, potatoes, garlic and winter squash.
• Use leftover veggies and veggie scraps to make broth.
• These are best refrigerated: cauliflower, cucumbers, leafy greens, Brussels sprouts, broccoli, apples, berries, peppers, asparagus, carrots, mushrooms and grapes. But, don’t wash them until you’re ready to use them!
• Before they spoil, freeze fruit like sliced bananas or berries for future smoothies.
