2-3 lbs fresh collard greens (preferably small leaves) ½ tbsp pepper 1 tsp sugar 1 smoked turkey leg 1-2 beef bouillon cubes


Tear leaves from stems and place in salty water. Wash collards thoroughly 4-5 times to remove any grit (change water each time). In Dutch oven or large pot, place drained collards with enough water to cover. Cook and cover collards on high heat, bringing to a boil. As collards wilt, add more until all are in pot. Once water begins to boil, add beef bouillon cubes, pepper, sugar and smoked turkey leg. Reduce heat to low. (suggest: test taste periodically and add more pepper, sugar or salt to taste) Cover and continue to cook until desired tenderness (approx 1-2 hrs). Note: rotate turkey leg every 30 mins.
