FOOD & DRINK GRAB AND GO In today’s time-pressured working environments with flexible working hours,


food on the go is a popular (and sometimes the only) choice for employees, from breakfast through to supper. It’s really no surprise that this sector of the eating out market has seen significant growth in recent years.


Consumers are more demanding when it comes to grab-and-go menus. Long gone are the days when a plain sandwich ‘will do’. They want a variety of freshly prepared options, from gourmet wraps and sandwiches and colourful, sustaining salads to yoghurt pots and fruit drinks, that use quality, seasonal ingredients, recognise dietary requirements and offer a mix of both healthier and indulgent choices.


Moreover, consumers want to know what they are eating and their appetite for exciting selections is matched by an appetite for information. From aiding lifestyle choices, such as counting calories or reducing fat intake, to managing food allergies and intolerances, this is a real expectation that caterers must meet to compete.


INFO IN THE CITY Lusso, CH&Co Group’s specialist City caterer, produces


a delicious range of on-the-go options, prepared daily on site, for the discerning palates of professionals working in the pressurised worlds of media and law to accountancy, insurance and banking. However, when its grab-and-go range was not performing as well as expected, the barrier for purchase was very clear.


Paul Hurren, Lusso’s Managing Director, explains: “Our grab-and-go menus were ticking all the boxes when it came to choice, quality ingredients, great flavour and innovation, but something was missing. That something was information. Our customers wanted to know what was in each dish and what impact they could have on their bodies. We, of course, listened and responded.”


Recognising that the lack of information could be driving customers onto the high street, where nutritional information is readily available, the Lusso team set to work to give their customers exactly what they wanted; a delicious grab-and-go range that met all dietary and lifestyle needs and was nutritionally signposted.


AN ENHANCED CHOICE Lusso’s Group Executive Chef, Candice Webber, and


CH&Co Group’s Nutritional Business Partner, Rory Larkin, worked together to review the range and calculate the nutritional values of each dish, including calories, fat, saturates, sugar and salt.


Rory is also a qualified chef and the combination of the two culinary minds and his nutritional knowledge and expertise, produced great results that significantly enhanced the grab-and-go range.

Whilst calculating the nutritional values for each product, Candice and Rory identified opportunities to reformulate recipes to make them healthier and enhance flavours. They have also ensured that the range includes options that cater for specific dietary requirements, including gluten free, dairy free, vegetarian and vegan.


Rory comments: “Coming from a chef background, I completely understand the challenges for chefs to create great-tasting food that is also healthy. But, as a nutritionist, I also realise how important it is for our customers in the workplace to have access to healthy food and food appropriate for special diets and to be supported with the right information to make accurate, confident choices.”


Candice continues: “It’s been great working with Rory on this project. We’ve made smart switches and innovated to get the best possible flavour out of the food whilst reducing sugar, fat and salt content wherever possible. By proactively removing ‘unnecessary’ calories, some items
