In Aid of Hospice Africa Uganda


THE BOOK Mag Kirwan of Goatsbridge Trout Farm in Thomastown, county Kilkenny, noticed that many modern cookery books neglected trout and set out to change that, with a little help from her friends. “There is still a false perception that trout is somewhat inferior to other fish such as salmon and cod, Ireland is a great place to produce this fish because of our high quality waters and temperate weather conditions. We have worked tirelessly to educate and promote what I believe is an amazing product and I decided it was time to do something about the lack of trout recipes in cookery books. I did a call-out to women from all walks of life for their favourite fish recipes, and Fishwives was born.”


World-renowned chefs Darina Allen and Clodagh McKenna joined politicians and TV presenters to share their favourite trout dishes, and the book contains 78 delicious recipes ranging from Mexican fish tacos, pictured left to rillettes of fresh trout, above.


The appetite for trout clearly extends beyond our shores as Fishwives recently scooped two wins at the Gourmand World Cookbook Awards. The Oscars of the food world, this competition honours the best food and wine books in the world and this year welcomed over 13,000 entries from 205 countries. Fishwives took home the Best Fish and Seafood book as well as the Best Charity-Africa award. “We were up against some serious chefs and cookbooks and I think it was the story behind the project,


and the honesty and integrity of the book that caught the attention of the judges.”


The second award came about because all proceeds from the sale of the book are donated to Hospice Africa Uganda (HAU), a charity that is helping thousands of sick and dying in Africa have a pain-free, dignified death. Mag explains that, “no costs are being kept for the publication or printing of the book, every cent that the consumer spends on the book will go to Hospice Uganda. After visiting Uganda and seeing first-hand the plight of the people, we agreed that it was vital for no costs or return to be taken.”
