OUT & ABOUT
There are also lots of ways to get involved while at home.
The Wild at Heart project, which is run by the Sheffield and Rotherham Wildlife Trust, has various wildlife-related garden activities and resources for all ages.
Get the kids building bug mansions, making their own binoculars, or crafting creatures and critters from saltdough. Adults
can learn how to make compost, a bee nest or hedgehog house, as well as wild recipes using edible produce you’ve foraged or grown. If you do head out, why not record the wildlife you see on a spring spotter sheet. There are also identification sheets so you can look for animal tracks or minibeasts.

Sunshine? Blue sky? Warmer weather? Yes please! What a treat it is to be able to spend hours
SWEET POTATO ROLLS
2 medium sweet potatoes
170g chestnut mushrooms Half a leek
60g breadcrumbs 1 pack of ready- rolled puff pastry 2 tbsp oil
1 egg, beaten 2 tbsp sesame seeds
• Cut the sweet potatoes in half lengthways and roast at 180 degrees C until soft. • Meanwhile finely chop the mushrooms and leek in a food processor.
• Heat 1 tablespoon oil in a frying pan and cook the mushrooms and leek over a medium heat for ten minutes. • When the sweet potatoes are cooked, mash then stir in the chestnut mushroom and leek mix. And the breadcrumbs then mix until well combined. • Turn the oven up to 200 degrees C. Cut the pastry in
half lengthways. Halve the sweet potato mixture and roll one half into a sausage shape. Place the ‘sausage’ down the middle of one piece of the pastry and roll the pastry around it like a long sausage roll. Repeat with the other piece of pastry and remaining mixture.
• Brush the top of the pastry with the beaten egg and sprinkle with sesame seeds. Place some baking parchment on a baking tray (or lightly flour the tray) and put the sausage rolls on top. Place in the centre of the oven for 20-25 minutes until brown and risen.
• Cut into pieces and enjoy!

outdoors. But at some point (at many points if you have children) we are going to get peckish. But what to pack in your picnic that’s a little different from a cheese sandwich? Here are two of our favourite recipes to keep those springtime adventures moving.
POPCORN 100g popping corn
50ml maple syrup 25ml honey 50ml butter or vegetable spread 50g pecan nuts
• Put the oil and popcorn in a pan with the lid on and gently heat. The corn will start popping and after 4-5 minutes of popping should stop. • Preheat the oven
to 160 degrees C. Melt the butter/ spread in a pan. Mix in a bowl with the honey and maple syrup. • Chop the nuts into small pieces.
• Mix the honey mixture, nuts and popcorn in a mixing bowl. • Line two trays with baking parchment. Spread the popcorn
