Aperfectwinter party dessert, this cranberry roulade looks fabulous, festive and fun. Fresh and light, the tartness of the cranberries compliments the sweetness of the meringue beautifully. Plus, it’s quick tomake and can be frozen,making easy entertaining simple.
Serves:8 Preparation time: 20minutes Cooking time: 25minutes
Ingredients
For themeringue: 5 eggswhites 275g caster sugar 50g flaked almonds
For the filling: 250gBerryWorld cranberries 100g caster sugar Grated zest and juice of half an orange 300ml double cream 3 tbspsCointreau
Method
1. Preheatovento200°C/GasMark6. Linea35cmx23cmSwiss roll tinwith lightly greasedbakingparchment. 2.Whisk theeggwhitesuntil very stiff, thengradually addthesugar.Spread themeringueintothepreparedtin andsprinklewiththealmonds.
3.Bakeintheovenfor 10minutes thenreducetheheat to160°C/Gas Mark3andcontinuetocook for a further
15minutes.Removefromthe ovenandturnalmondsidedownon toa sheetofbakingparchment, allow tocool.
4.Tomakethefilling,placethe cranberries ina saucepanwiththe
sugar,orangejuiceandzest and simmeruntil softenedandsyrupy. Thentakeoff theheat andallowto cool. 5.When ready to assemblewhisk the creamand theCointreau until the mixture stands in soft peaks. Spread the cool cranberrymixture evenly over the roulade then spread the creamover. Roll up fromthe long end fairly tightly, don’tworry if it cracks a little. Place on a serving plate and chill before serving.
CooksTip: For that extrawowfactor decoratewith chocolate holly leaves
and delicious crystallised fresh cranberries. For the holly leaves, paintmelted chocolate onto the back of clean holly or bay leaves, allowto set in the fridge, repeatwith another layer of chocolate and set
again.Carefully peel off. Tomake crystallised cranberries, soak fresh uncooked cranberries in a sugar syrup, roll in caster sugar and allowto dry for a fewhours. Tofreeze: Place the filled and rolled roulade on a suitable platter, open freeze overnight thenwrap in a double layer of
foil.Allowto defrost slowly for several hours.
