RoastTurkey Fillet with Celery, Walnut and Sausage Stuffing

Ingredients
1kg to 1.2kgBritish turkey fillet Butter,melted 12 to 16 rashers of dry-cure smoked, streaky bacon Salt and pepper to taste
For the stuffing: 450g sausagemeat 6 shallots, peeled and finely diced 4 sticks celery, diced 75gwalnuts, chopped 100g fresh breadcrumbs 1 tbsp chopped fresh sage leaves 1 free range egg, beaten Salt and pepper to taste
Method
1. Preheat oven to 180°C/350°F/ Gas 5.Butter a large roasting tin.
2.Cut open the fillet and beat it with awoodenmallet until it is has increased in size by a third – be careful not tomake any holes in
themeat.Brush some of the melted butter over the turkey and seasonwith salt and pepper. 3.Mix all the stuffing ingredients together and seasonwith salt and pepper.
4.Make a long sausage shape with the stuffingmixture and place it in themiddle of the turkey fillet, roll the turkeymeat
around to cover all the stuffing.
5.Carefullywrap the streaky bacon around the rolled turkey fillet, tucking the ends underneath.With a spatula, lift it into the buttered roasting tin. Tuck any stray pieces of bacon underneath if necessary.
6.Add 6 tablespoons ofwater and coverwith tinfoil before roasting for 40minutes per kilo plus 20 minutes, so a kilowill take one hour to cook. Remove the foil for the last 15 to 20minutes of cooking to allowthe bacon to crisp up.
7.Allowto stand, loosely covered in tinfoil, for 10to 15minutes before cutting into slices and servingwith seasonal vegetables and potatoes. (The juices fromthe roasting tin can bemade into gravy).

In 2013, Fenland celerywas awarded ProtectedGeographical Indication (PGI) status and joined the ranks of Parma ham,Champagne and MeltonMowbray Pork Pies. Fenland celery is only grown in small pockets ofCambridgeshire, Suffolk andNorfolk using traditional farmingmethods. The deep, peaty soils in the Fenswork towards giving Fenland celery its nutty- sweet flavour and paler colour. Fenland celery is available from October toDecember and can be found inWaitrose,Marks& Spencer and Tesco stores nationwide and online atOcado.
